Personal-size cake in less than 5 minutes!

I shared this on The Precious Mind, but, I know a lot of my readers don't check my homeschooling site, so I'm going to share it here as well.


This is my revised version of this delicious personal-sized cake. The original version made one hefty serving, that, in my opinion, wasn't very moist and needed a little more sweetness. My version makes two perfect-sized cakes that are moist and delicious.

First, you'll need self-rising flour. If you don't have self-rising flour, you can make it by combining 1 cup all-purpose flour, 1 & 1/2 teaspoons baking powder, and 1/2 teaspoon salt.


Ingredients:
4 TBSP self-rising flour
4 TBSP cocoa powder
5 TBSP sugar

1 egg
3 TBSP milk
3 TBSP oil
splash of vanilla extract
chocolate syrup (optional)

Combine dry ingredients and mix together well. (You can mix these with a fork in a cereal bowl.) Add in egg, milk, oil, and vanilla. Mix well. Stir in a couple squirts of chocolate syrup.

Grease two regular size coffee cups. Divide cake mixture between the two cups. Add a small squirt of chocolate syrup on top of each. (Do not mix in.) Microwave each cup (separately) for ONE minute each.

It's SOOO delicious and takes less than five minutes to make (and eat!).

Mandy - you should NOT have posted that recipe!! Of course I had to make it today and I'm hooked! NOT good for the "post baby" diet!! Of course I went through a gallon of milk too. Not really a gallon but you get the idea.
